BOLLITO MISTO

A dish of vegetables and various meats, such as chicken, beef, and sausage, simmered together and usually served with an anchovy-garlic sauce. In Italian, Bollito means Stew and Misto means Mixed.

Bollito Misto is a Veronese speciality and is mostly a winter dish not really suitable for a hot summer. It is a full platter of boiled meats served with various sauces - coarse rock salt, mostarda di frutta (mustard-

glazed fruits), fiery horse radish, lush green salsa verde. One of the specialty sauce is the classicVeronese sauce of bone marrow, beef stock, Parmigiano and breadcrumbs, flavoured with peppercorns. The meats include - ham, beef, veal tongue, sausages, testina (pig’s head) etc. This dish is definitely not for the vegetarians.

The dish is popular on New Years Eve in Italy. The meat represents good health, the lentils wealth and the fruit good spirits.
