Sugar, when heated beyond certain temperature, it melts and turns brown attaining a shiny hard state. This process is used in preparing candies and other sweets which may include fillings such as dry fruits or liqueurs. Many desserts are also served with caramelized tops. It can be done at home using a cook’s blow torch or very hot preheated grill.
