French for "goat," This French word has come to be used to refer to all French cheeses made from pasteurised goats' milk. Chèvre is a pure white goat's-milk cheese with a delightfully tart flavor that easily distinguishes it from other cheeses. Some of the better known chèvres include banon, bûcheron and montrachet.. Chèvres can vary in maturity and strength of flavour, and they range in texture from moist and creamy to dry and semi-firm. They come in a variety of shapes including cylinders, discs, cones and pyramids, and are often coated in edible ash or leaves, herbs or pepper. Improper storage can lead to souring of taste rendering it unfit to eat. It should be refrigerated after wrapping tightly.
