FAVA BEAN or BROAD BEANS

Fava Bean, also known as Broad Beans, is a flat bean coming in large pods. The pod itself is edible when plucked young. The natural season for the fresh beans is rather short, only during summer. Available through the year as frozen and canned, they have a smooth texture, sweet and tasty. The fresh ones are more popular than the canned or dried. They become floury when dry. after removing the pod. The dried beans, after removing of the skin are called Habas, popular in Middle Eastern region. Fava Beans are sometimes referred to as Horse Beans also.

They're also good for flavouring meat stews or lamb dishes. Egyptian ful medames is a dish of cooked broad beans (a dried variety called 'ful') flavoured with garlic and lemon.
