A floating island (French: île flottante or oeufs à la neige) is a French dessert consisting of an "island" of meringue floating in a "sea" of custard.
It is a popular desserts of typical French cuisine. The meringue is made from egg whites, sugar, vanilla extract and usually cream of tartar, and cooked in a bain-marie. A number of variations have evolved from this classic dish.
