Matzo Brei (Hebrew: מצה מטוגנת, translit.: Matza metugenet) is a form of matzo fried with egg. There are numerous recipes for this dish, some may be based on, but not necessarily, the dry matzo being softened (but not made soggy) by running under hot water (some use milk), being broken into small pieces, mixed with egg (approximately one egg per sheet of matzo) and fried in butter.
