some quite unusual, such as ash berries, chufa, Grains of Paradise, orris root, Monk's pepper, cubebs, dried rosebud, and the potentially toxic belladonna and Spanish fly (however, the sale of Spanish fly was banned in the spice markets of Morocco in the 1990s). Usually all ingredients are toasted and then ground up together. Individual recipes are often improvised.
Ras el hanout is used in pastilla, the Moroccan squab and almond pie, and is sometimes rubbed on meats or stirred into couscous or rice. It is often believed to be an aphrodisiac.

4 nutmegs, 10 rose buds, 12 cinnamon sticks, 12 blades of mace, 1 teaspoon anise, 8 pieces turmeric, 2 pieces orris root, 2 cayenne peppers, 1/2 teaspoon lavender, 1 tablespoon white pepper, 2 pieces galingale, 2 tablespoons ginger root, 6 cloves, 24 allspice berries, 20 cardamom pods, 4 black cardamom pods, and 20 threads of saffron.
