Vol Au Vent (french for "flight of the wind") are small canapés. They are circular pieces of puff pastry with a small hole which accommodates various fillings, such as mushrooms, prawns, fruit, cheese, etc.
It is said to have been created by the famous French chef Carֽme. The puff-pastry lid is set on top of the filling. This dish may be served as an appetizer or an entrée. The term vol-au-vent, "flying in the wind," refers to the pastry's incredible lightness. |
